That's what they call it in Batangas. It's actually pork cooked on its own fats. Most of the time when I cook pork let say for "sinigang" or "adobo" etc. I usually remove the fats with skin and cook it as "pupur". It can be a "pulutan" or can be eaten with rice. I use to eat it while cooking my menu, hehe. Chili vinegar is a good pair for this.
